A couple nights ago, I came home from a karate class and I was hungry for dinner, and didn't know what to have. I looked in the refridge for something but I didn't see anything appealing.
Then I glanced over and saw what looked like a perfect amount of couscous sitting on the counter. So I cooked it up with some parsley and quartered cherry tomatoes. After that I put it in a bowl...
Just to make it pretty for the photo, added a fresh basil leaf. If you decide to try this out you can add your own personal twists. Enjoy!

Thumbs up!
ReplyDeleteDo you have a preference between Israeli and Moroccan cous cous? I am having a hard time deciding, but right now I think I will have what you're having.
I personally like the smaller (Moroccan) couscous, but that is just my opinion. I hope you enjoy whichever one you choose to have.
ReplyDeleteMy parents also really like the Israeli couscous salad they sell at Costco--it has cherry tomatoes along with feta, cilantro, parsley, mint, and onion.
I have not had that salad, but that sounds good, too! I like the cous cous salad at Whole Foods. I forget what is in it, but I know there is citrus, dried cranberries, and walnuts.
ReplyDeleteAs for the Moroccan, I like it because it is so versitile (actually, they both are) with the type of liquid that you cook it in.
Love your creativity with this dish, Abby. Sounds yummy!
ReplyDeleteWe used vegetable stock to cook this version
ReplyDeleteI can't wait to make the new couscous we bought yesterday.
